Happy Thanksgiving! Butternut Squash and Mushroom Wellington

I actuallly made this a few weeks ago after reading it in the New York Times. I think it’s a great main course for  vegetarians at Thanksgiving.  I usually bring wine and sides to Thanksgiving dinner. This year, there’s a vegetarian so I’ll make this up in the morning. Each Wwellington sliced nicely into three servings. And, it freezed perfectly. I brought the extra to work for a week. I was planning on sharing. But, it was so good I kept it all for myself.

A Greek woman in my office asked if I made the puff pastry myself. I couldn’t stop laughing. I like to cook and all. But, puff pastry / filo is asking a LOT of me!

    Great recipe! One of my daughter’s friends is a vegetarian and I am always wanting to give her something different when she visits.

    Thank you sooooo much. I’m in the UK so we don’t celebrate thanksgiving but I am having a dinner party for a friend’s birthday this weekend. We are having beef wellington but there is 1 vegetarian and I was wondering what to make them. This is perfect timing and a perfect recipe to go with the beef wellington for meat eaters!

      I LOVE Beef Wellington. I’ve never made it myself, but it’s one of the reasons this appealed to me. I was thrilled at how well it came out!

    ahahaha…make your own filo? Isn’t that why G-d invented packaged frozen filo? This is such a great idea!! We’re doing traditional things this year but I’m definitely putting this recipe into the rotation.

    Thanks for what looks like a great recipe! Lately I read sewing blogs far more than the NYT (go figure!), so I’d have missed this. It’s hard to find something dramatic (and tasty) enough for a holiday vegetarian entree. This should fit the bill perfectly!

      ‘Dramatic’ is the right word! Thank you. A plate full of sides seems sort of dull. But, this presents well.

    Hi Cidell,
    A belated thank you for this recipe. I made them for my family’s vegetarian Christmas dinner and they were a massive hit. And the leftovers were pretty good cold the next day too!

      Woo hoo! I’m planning on making it tomorrow myself. I joined a CSA this summer and have squash out the wazoo in the freezer :)
